In sourdough is nothing to be scared of. The truth is, you could leave it sealed on a counter for a year and you would just be emulating the monks of the past. Sourdough wants to live.
We will add to this section aggresively, but here are a few quick notes for home use.
1) We recommend beginning to feed your starter about 3 days before use for healthy activity.
2) Sourdough is just Water + Flour + Time … the ratio is what will effect your activity window.
3) We like to feed ours 1/2 of its weight, in equal parts flour and water. 1000 grams starter would be fed with 250 grams flour and 250 grams water.
With this much starter to feed, your window will be shorter, but you will get a more punchy flavor.
72 degrees farenheit, or room temperature water is fine.
Use 5-8 hours after third feed.
It will be at peak window when it has a convex with bubbles, and can hold the weight of a small spoon.
4) Add depth of flavor anywhere. Throw some into your pancake or waffle batter for kicks.
5) Treat it with love and respect, there are many like it, but this one is yours.
